Spelt bread with wild garlic spread
Spelt is ancient wheat with exceptional, healthy qualities. It is not subject to genetic modification and is rich in minerals. The recipe shows how to prepare delicious spelt bread, which goes great with wild garlic spread.
Ingredients to serve four:
•½ kg spelt flour
•¼ teaspoon salt
•½ cube yeast
•water, if necessary
Ingredients for wild garlic spread:
•3 tablespoons cottage cheese (coarse, full-fat)
•1 tablespoon sour cream
•1 tablespoon wild garlic pesto
Sift the flour in a bowl, add salt at the edge. Break up the yeast, add water, a teaspoon of sugar and let rise in a warm place for 10 minutes. Add the yeast to the flour and knead until the dough is smooth. If necessary, add 150–200 ml of lukewarm water.
Cover the dough with a kitchen towel and leave it in a bowl to rise for 1 hour. Knead the dough again and place it in an elongated baking tray greased with oil or butter. Let it rise for another 20 minutes in the baking tray. Bake 50 minutes at 180 ° C.
To make the spread, place the cottage cheese, sour cream and wild garlic pesto in a bowl and mix until well combined. Serve with spelt bread.
